My wife is laughing as I read her this stuff... good work everyone.
The point is: I have been writing about cafe culture non-stop since 1994 and I keep learning more and more.
Several years ago I thought I had it all down pat. I do not know it all. Specialty coffee is in a rapid evolution right now.
The Clover, for instance, is in a handful of North American markets right now.
Any coffee nut worth his salt in Vancouver, Victoria or Seattle owes it to himself/herself to check it out.
Get educated.

new Clover love for me... 40gram/4.5 grind setting(that is lots coarser) today logan and i tried most of our single orgins like this and i gota say that we were both blown away by the results. the up dose gave the cup more purfume and body the coarder grind gave the cup such better flavour that it is hard to describe.
if you have not had a great experience with the clover yet now you will. as logan or i for the new dose and a sample pack of two or three coffees to test. we will be implimenting the new clover technique soon, maybe not by tomorow officially, but you can always ask!!! tomorow i am putting my Kenya to the test. my guess is that it will taste best at 37 grams and #4 grind. ohhhhhhhh....i can not wait untill 4am!

How much coffee are you brewing from that 37-40 grams, if I might ask?
My visit to your shop was - alas - before Discovery and before the Clover (have very fond memories of meeting you, your crew, and the Cyncra, of course ). Hope to rectify that with another visit should I be lucky enough to make it out west again.

hi Dave. it was a pleasure to meet you. hopfully again soon. 37-40grams in a 12-16 oz serving. i am just doing a kenya right now!... i was at the Canadian Coffee and Tea Expo and had a terrible clover coffee from a newly clovered company and it was bad. over roasted coffee and bad clover technique ie. they did not mix the coffee well and therefore the extraction was uneven and imballanced. the kenya is fantastic! crazy complextion between the classic acidic kenya and a sweet overtone that lingers well past the acrid notes. yum. I better get back to the roaster. cheers, sam
