I never use coffee that has been roasted within the last 24 hours.
Espresso coffee is at its best between DAY 2 on planet Earth (Day one being Roast Day -- or 24 hours...) and day 5 or 6. Something happens somewhere between Day 5 and Day 8 called "Last Gasp" - it is when the bean is giving off its last protective shield of carbon dioxide.
Once that happens, it is open season for the oxygen to invade and stale the bean.
That is a pretty simple analogy... but it works.
