While in Halifax, a couple of years back, I was at Steve O'Renos every morning for Granola-Yoghurt & Fruit as well as an Americano.

1. Phil and Sebastian Coffee Company, Calgary Farmers' Market at Currie Barracks. Beans are sourced from Hines, Intelligentsia, and Novo. La Marzocco FB80, the first Clover in Canada east of Vancouver, this is third wave in every respect and has raised the bar for the rest of the city. Only bad thing is the market is only open Fri-Sun, but will soon be open Thurs-Sun and later Fri eves (until 9) summers. link
2. Java Jamboree, 312 5th Ave W, Cochrane. Beans from Vivace and Josuma (Malabar Gold). Three-group Synesso Cyncra, which when they got it was only the second one in Canada. Walls are covered with photos of staff latte art, first place (by a year) in Calgary to do latte art. No Clover yet but owners will be opening second location near DT Calgary, which is great for those of us who find Cochrane a long drive (Cochrane is a NW suburb of Calgary). Expect a Clover and another Synesso there, and a new name.
3. Bumpy's, 1040 8 St SW, Calgary, link. Locally roasted beans from Big Mountain Coffee Roasters, very good small batch roaster, Elektra Modern. Inestimably trained staff and very well-staffed too numerically (a real feat in Calgary); pull BMCR espresso and one SO espresso (Sidamo last check); all baristas do latte art and take coffee seriously. Excellent food, crowded, breakfast/lunch only.
That's it for third wave in the city and environs- should mention that there are a couple other LMs in town, a Linea at Main Dish, in the Bridgeland area NE of downtown, and another at Nectar Desserts in Inglewood, east of downtown. I've heard of efforts to improve the coffee program at The House in Kensington (moved up to Big Mountain beans and are planning to get an FB70) and at Caffe Beano on 17th, which is getting tutelage from Sebastian of P&S but as of last visit it was still completely horrible.

Similar to Ottawa, the best pull is by I Deal Coffee in Kensington market, hands down. Acceptable pulls from the Tango Palace Coffee shop at Queen and Jones and Mercury Organic espresso bar at 915 Queen East. There's been a lot of new small shops open recently, particularly in the east end, which is great for me.

I lived in Whistler for a few years and surprisingly (for it's size and high employee turnover) you have two options for good coffee there:
Cafe de la Place Internet Cafe (formerly Hotbox) - roaster: Cafe Classics in Richmond - great croissants and sandwiches
Whistler's Own Bakeshop (Rabbit Hole Cafe) - fairly new in Whistler and have gone through two roasters already - current roaster: Galileo Coffee Co. in Brittania Beach

For espresso I'd even say an hour is WAY too long. It should go from the grinder to the pf. After 30 seconds I consider my espresso old and dump it. There's just too many chemical changes happening...
GROUND coffee is fresh for about an hour.
Ditch the pre-ground coffee and grind it yourself.
Your espresso is never going to be right if you use pre-ground.
