The good, the bad and the ugly... - 2007/06/28 14:34 There are two things I have seen in over 20 years of specialty coffee observation that totally horrified me:

1.) In 1993 I was in a place called Zachary Bean. They were in a palatial spot on the 700 Block of Yates street in Victoria. They had just moved from a closet sized cafe on View Street near the View Street parkade - it was ambitious for any independent joint to make this kind of jump quickly.

Their coffee was crap - it was always crap... and I wanted to find out why. I figure if I waited long enough and watched long enough the truth would be revealed.

And so it was to be...
One day while watching (the owner no less)I spied the lady barista scooping coffee into an already used basket of coffee in one of the drip pot machines.

She was recycling the coffee grounds! Bingo!

I asked about it immediately.
She said and I quote: "This does not effect the flavor and it stretches the coffee!"

I pushed on with my questions...
"What about the cappuccino machine?" I asked.

"Oh yea, we do the same there... sometimes we brew the same grounds twice... no one complains"

I could not believe this - I thought I had seen it all. Actually, there were several places in Victoria that did this.

2.) While sitting in a SERIOUS COFFEE recently I noticed the gal (also an owner) behind the counter tidying up around the grinders. She was sweeping up... the coffee grounds that had fallen around the counter. Good to be neat, right?
She was sweeping them back into the grinder doser!
Yikes!
