bathtub lattes - 2005/12/15 09:56 The last few times I've had a commercial latte, the size choices have ranged from 12 oz. on up to birdbath-sized. I understand that the baristae use whatever number and strength of espresso shots they feel like using.

Here am I at home with my Saeco Aroma - a little steamer wand and a little stainless steel container for heating milk. I don't see myself heating up pints of milk that way. Also, a portafilter that will make a double shot at one time.

What size do you folks make at home with equipment like mine?

Re:bathtub lattes - 2005/12/15 11:00 I do not drink milk, but when I am making on-request lattes, they are typically 8 ounces, 12 ounces at the MAX.

The machine is a Silvia by Rancilio and the steaming chalice is an 8 ouncer I think (I should measure this).

What I have NOT understood are:

-the trends in super-sized caps and lattes and the non-coffee dessert drinks which BUX seems to have proliferated.
-Lattes served in begging bowls are some chi-chi cafes. What is up with this? Every tried holding one of these things when the milk is the right temperature?

I'd suggest shooting for an 8oz latté, based on a 2oz double. Art is optional, but adds some flair when you get the hang of it. I find this drink to be fairly distinct from a 5oz cappuccino, where the coffee retains a more central role.

Any more than 8oz and it is getting too unbalanced and biased toward the milk, imo. This is also a reasonable amount of milk for consistent microfoam. In larger pitchers (20oz), you may find that adding a little more milk helps to keep things under control: preventing the whirlpool crater from dipping below the nozzle, inadvertantly injecting lots of big bubbles.

Be sure to heat the milk to the appropriate level to bring on its sweetness without breaking it or scalding it. I usually stop around 145'F, finding 150-160 too hot.
